I was never a fan of Konfabulator,now Yahoo Widgets. I never found anything really useful to me but I got to say I’m loving Dashboard. Here are some of my favorite non-default widgets:

Issues:
Ventrilo and Teamspeex can only use Speex codec, default is GSM, Have to change it on the server to work.
Quickbooks not up to par with Windows Version, tho i haven’t tried QB 2006 yet.
Skype not working on Intel Macs.
Office 2004 sluggish, Rosetta
ecto sluggish. Rosetta
Needed to used a patched version of Azureus
Firefox not Universal Binary yet, sluggish, Rosetta
Things I can’t do on Mac I can on Windows (so far):
Update the firmware on my MPx220 cell phone. Updater is Windows only.

I saw your list of programs you use with OSX and thought I’d give you some more hints that us long time mac people know.
Burning - Use Disk Utility, it can burn iso, cdr, dmg files right to dvd or cd. Plus others I’m sure but I only use those 3.
Compression - Again Disk Util can convert things to DMG with compression or not. Faster than stuffit.
Videoplayer - There are tons of plug-ins for Quicktime, xvid, flip4mac, ogg, upgrade it to Quicktime Pro also.
Office - i’works 06. Pages is much faster.
And last a hint I do every new load of OSX, drag the HD icon to the task bar near the trash. Now you can right click it to access all your folders and files quickly. You can also drag folders over there and access them the same way.

Thanks for the tips. Disk Utility was something i was unaware of. I’ve picked up iWorks 06 since i wrote this and have been loving Pages.
